OK I know I have been slacking hard with the new post stuff but here is one that is too good to not share!

Red Chile Butter Cream Frosting

Ingredients:

1 cup softened butter
1/2 cup cocoa powder, sifted
2 cups coconut sugar
2 cups powdered sugar
1 teaspoon vanilla
3-4 tablespoons milk
3 tablespoons Mild Chimayo Chile powder

Directions:

Melt butter, coconut sugar and milk together on low heat. Let cool completely. Then whip butter mixture, chile powder and cocoa together in large bowl until smooth. Stir in vanilla and powdered sugar. You may want to add more sugar for desired consistency. Scrape sides and whip again until light, fluffy and smooth, 1-2 minutes. Frosts 1-9 or 8 inch round layered cake or 24 cupcakes.
